My favorite episode might be She of Little Faith, season 13. It has so many jokes that I absolutely love, and I cant list them all but I'll list a lot in what I think is an underrated episode in general.

the itchy and scratchy cartoon in the front where itchy keeps hitting scratchy with the mallet, and then say "kids, say no to drugs" is pretty funny, but the line that follows it is gold:

"that's even worse than those tastless itchy and sambo cartoons from the late 30s."

i think it's great that lisa finds a bland cartoon with an unsubtle message worse than a cartoon with exaggerated, outdated racial stereotypes

The bit from the episode "Scenes From The Class Struggle In Springfield" where Burns and Smithers discusses Homer who's begun to play golf has an awesome bit of underrated humor:

Burns: (talking about how he let Nixon win over him in gof back in '74) Oh, he just looked so forlorn, Smithers, with his *imitating Nixon* "Oh, I can't go to prison, Monty. They'll eat me alive!"... I wonder if this Homer Nixon is of any relation?
Smithers: Unlikely, sir. They spell and pronounce their names differently.
Burns: Bah!, schedule a game and I'll ask him myself.

The part where Burns confusedly refers to Homer as "Homer Nixon" gets me everytime; I know it's rather simple but I love that moment and I get the feeling that i'm one of few who does it.

Yeah I agree that's one of the best episodes and yet I never see it mentioned anywhere.

Another underrated joke is Homer's line from Call of the simpsons:

And of course:

It's a little late for Lenny

I always forget which episode that one's in but it's one of the best jokes in the show.
