I'm not sure about other DVDs (mainly the Classics DVDs available in Europe and Australia), but I found these differences:

THE SIMPSONS BACKSTAGE PASS:
A Tale of Two Springfields
Homerpalooza
New Kids on The Blecch
The Otto Show

AUS version: Delete "New Kids on The Blecch" and add "Homer's Barbershop Quartet" (NOTE: there is an advertisment for this collection in Simpsons Summer Special Comics #1 in Australia, which features "New Kids..." even though it isn't on the Aus release)

SIMPSONS CLASSICS: The Dark Secrets of the Simpsons
VHS:
The Springfield Files
Homer The Great
Lisa The Iconoclast
Homer Badman

DVD:
Homer To The Max
The Springfield Files
Lisa The Iconoclast
Homer Badman

(Homer To The Max has replaced Homer The Great)

There is another Simpsons Classics DVD (The one with Bart After Dark...forget what the disc's called), that on the FOX DVD website lists Lisa Gets An A as an episode on it, while the DVD doesn't contain it (The AUS version, anyway)

Anyone else got any more?

All versions of "Backstage Pass", VHS or DVD, have HBQ in place of NKOTB. I believe it was replaced at the last minute.

On Simpsons Go To Hollywood, when it was rereleased as part of the 'DVD Classics' range, When You Dish Upon A Star replaced Homer To The Max.

At the bottom of this (http://www.snpp.com/guides/dvdguide.html) page there are all the differences between the VHS and DVD. A very useful page concerning all DVD bits and bobs.

I thought When You Dish UponA Star was on the VHS one as well?

It's not on the original UK VHS at least.
